Greek Salad
Preparation time: 5 minutes
Ingredients:
2 medium tomatoes
1 medium onion
1 green pepper
1 cucumber
120 gr. feta cheese
6 black olives
1 tsp capers
3-4 tablespoons Extra Virgin Olive Oil OLIVION
Salt
Oregano
Instructions:
In a bowl, cut the vegetables into slices and cut the feta cheese into cubes. Add the olives and capers. Add salt and oregano and top with extra virgin olive oil OLIVION.
Tzatziki
Preparation time: 5 minutes
Ingredients:
480gr. strained yoghurt
1 tender cucumber chopped in slices (preferably unpeeled)
2 cloves garlic
2 tablespoons Extra Virgin Olive Oil OLIVION
1 tablespoons vinegar
Salt and pepper
Instructions:
Pound the garlic in a mortar and sprinkle with a little salt and pepper. Mix the Extra Virgin Olive Oil OLIVION with the vinegar and add the garlic. Put the yogurt in a bowl and mix well adding little by little the mixture of garlic and vinegar and finally the chopped cucumber.
Humus
Preparation time: 5 minutes
Ingredients:
1 cup boiled chickpeas
1 tablespoon tahini
1 clove garlic
Juice of 1 lemon
6 tablespoons Extra virgin olive oil OLIVION
½ tsp cumin
½ tsp cayenne pepper
A little freshly ground black pepper
2 tablespoons fresh chopped parsley
Instructions:
Melt the chickpeas and garlic well in a blender with 2-3 tablespoons of water to create a thick cream. Put the thick cream, the lemon juice, the tahini, 3 tablespoons Extra virgin olive oil OLIVION, the cumin, the cayenne and the black pepper in a bowl. You stir the mixture with a wire egg until the ingredients come together. If the mixture is too thick, add a little more water slowly. The mixture should have the appearance of an ointment. Finally, add the parsley and mix well. Store the humus into the fridge. Before serving, drizzle the humus with 3 tablespoons raw extra virgin olive oil OLIVION and garnish it with olives or parsley leaves.
Olive Paste
Preparation time: 5 minutes
Ingredients:
1 cup black olives
¼ cup ground almonds
¼ cup capers
¼ cup extra virgin olive oil OLIVION
2 tablespoons vinegar
Pepper
1 tsp. fresh oregano
Instructions:
Melt the olives with the almonds in a blender, add the capers, continue the blending and pour the extra virgin olive oil OLIVION and the vinegar. Add the pepper and oregano and mix well with a spoon. The mixture should be thick and may be kept in the refrigerator for several days.
Grilled Fish
Preparation time: 20 minutes
Ingredients:
2 bream fish (or other fish of your choice)
6 tablespoons Extra Virgin Olive Oil OLIVION
Salt, pepper
Lemon
parsley
Instructions:
Clean the bream, sprinkle them with salt and pepper and let them drain. Turn on the grill in moderate heat, coat the bream with 2 tablespoons extra virgin olive oil OLIVION and bake on one side and then on the other. When the bream are ready, place them on an oblong platter, sprinkle with the remaining extra virgin olive oil OLIVION and lemon and garnish them with chopped parsley.
Scented oil for grilled meats
Preparation time: 5 minutes
Ingredients:
½ liter of extra virgin olive oil OLIVION
1 twig of thyme
1 bay leaf
6 peppercorns
1 crushed clove garlic
1 tsp grated fennel
Instructions:
Mix all the ingredients in a bowl, cover it with a plate and allow the ingredients to stay for a month. Strain the olive oil into a bottle and use it whenever you need it.
Grilled Steaks
Preparation time: 30 minutes
Ingredients:
4 veal chops
8 tablespoons Extra Virgin Olive Oil OLIVION
Salt, pepper
Oregano
Lemon
Instructions:
Beat the beef steaks lightly with a special mallet. Then, marinate them long enough in flavored olive oil or extra virgin olive oil OLIVION with salt, pepper and oregano. Grill them in high heat, brush them frequently with the marinade and serve them warm.
Semolina Pudding
Preparation time: 20 minutes
Ingredients:
2 cups fine semolina
1 cup extra virgin olive oil OLIVION
1 ½ cup sugar
½ cup honey
5 cups water
¼ cup walnuts groats
¼ cup pine cones
¼ cup blonde raisins
2 pieces of cinnamon - 3 cloves - 1 lemon
Instructions:
Put water, sugar, honey and herbs to boil for 2-3 minutes. Remove the herbs with a slotted spoon and keep the syrup hot.
Place the extra virgin olive oil OLIVION in a wide saucepan to burn and throw the semolina little by little and stir constantly with wooden spoon. When it becomes blonde, add the walnuts and the pine cones. Stir constantly over low heat until the semolina gets a brown color. Download the saucepan from the heat, add the raisins, stir and add the syrup. Place the saucepan over low heat until the semolina absorbs the fluid. Download the saucepan from the heat, stir well, cover with a clean towel for 5 minutes and then put the semolina to large or small forms. Deform, sprinkle with sugar and cinnamon and serve.
Raisinbread
Preparation time: 1 hour
Ingredients:
1 tablespoon yeast powder
½ cup sugar
½ cup extra virgin olive oil OLIVION
½ cup lukewarm water
1 cup orange juice
1 cup black raisins
4 cups flour (approximately) for all uses
½ tsp cinnamon
¼ tsp clove
¼ tsp fresh mastic pounded with a little flour
Orange zest
A little salt
Instructions:
Put the yeast in a bowl and dissolve it in warm water. Sprinkle with a little flour, stir it to make porridge and leave it in a warm place to rise.
Put the extra virgin olive oil OLIVION, the sugar, the orange juice, the dissolved yeast, the raisins and the remaining flour with the salt in a bowl. Knead well and add the spices. Let the dough rise in warm place until doubled in volume. Shaped rolls or loaf and bake in moderate oven for 40-45 minutes.
Cake with Apples
Preparation time: 1 hour
Ingredients:
6 apples, peeled and cut into thin slices
1 ½ cup sugar
3 cups flour for all purposes
1 tsp soda
1 tsp salt
2 tsp grated cinnamon & clove
½ cup crushed walnuts
1 cup blonde raisins
1 cup extra virgin olive oil OLIVION
1 vanilla
Icing sugar for dusting
Instructions:
Put the apples and the sugar in a large saucepan over low heat until the sugar melts a bit without cooking the apples. Download the saucepan from the heat. Stir the flour with the baking soda, the spices, the salt, the walnuts and the raisins. Pour the extra virgin olive oil OLIVION in the mixture of apples and then the flour. Stir until the materials are well combined and form a thick mixture. Brush the pan with some olive oil, pour the mixture and bake in moderate oven for 45-50 minutes. When completely cooled, sprinkle with powdered sugar.
Orange Cookies
Preparation time: 45 minutes
Ingredients:
1 ½ cup extra virgin olive oil OLIVION
1 cup sugar
1 ½ cup orange juice
3 tsp baking powder
1 tsp soda
6 tablespoons cognac
Orange zest
1 ½ pound soft flour
A little sesame
Instructions:
Mix the extra virgin olive oil OLIVION with the sugar until the sugar melts. Add the orange juice, the cognac, the orange zest and the flour mixed with the baking soda and the baking powder. Feel your dough becoming soft. Shape the cookies round or oblong, sprinkle them with some sesame seeds and bake in moderate oven for about 25 minutes until they acquire a yellow color.
